From refrigerator to plate in under 10 minutes. A fantastic summer dessert.


Ingredients

1 spray(s) cooking spray
1/4 cup(s) light cream cheese, at room temperature
2 Tbsp reduced-fat sour cream
1 Tbsp honey
3 large peach(es), pitted and halved

Instructions
Preheat the grill. Off heat, coat the grill rack with cooking spray.


Mash the cream cheese and sour cream in a bowl with a fork; stir in the honey until smooth.


When the grill is hot, grill the peaches cut side down until marked, about 1 minute. Alternatively, spray a grill pan with cooking spray and heat over medium-high heat; add the peaches cut side down and grill until marked, about 1 minute.


Place a peach half cut-side up on each of six plates; top each with 1 tablespoon sweetened cheese mixture. Yields 1 peach half per serving.
Notes
Use peaches that smell sweet but are still a little firm so they hold up over the heat. Garnish with ground cinnamon or grated nutmeg.

Smoky Orange-BBQ Shrimp Skewers

A quick and easy main course. The chipotle barbecue sauce's heat is mellowed by the sweetness of the orange juice.


Ingredients

3 Tbsp barbecue sauce, chipotle-variety
2 Tbsp cilantro, fresh, chopped
1 tsp orange zest, plus extra for garnish
1 1/2 Tbsp fresh orange juice
1 tsp apple cider vinegar
1/4 tsp ground cumin
1 pound(s) shrimp, extra large, fresh or thawed frozen, peeled and deveined*
3 spray(s) cooking spray, divided
2 Tbsp scallion(s), sliced

Instructions
If using wooden skewers, soak them in water for 20 minutes


Meanwhile, in a large bowl, stir together barbecue sauce, cilantro, orange zest and juice, vinegar and cumin. Add shrimp and toss to coat; let marinate at least 10 minutes.


Off heat, coat grill rack with cooking spray; heat grill.


Thread 5 or 6 shrimp onto each of four 12-inch metal or wooden skewers and brush with sauce remaining in bowl; lightly coat skewers with cooking spray.


Grill skewers, turning as needed, just until shrimp are cooked through, about 6 to 8 minutes. Remove to serving plates or a platter; sprinkle with scallions and orange zest (optional). Yields 1 skewer (5 to 6 shrimp) per serving.
Notes
*about 21 to 25 shrimp per pound

Garnish with orange zest, if desired.

Prosecco Raspberry Cocktail

Fruity and festive. An easy go-to-cocktail for celebrations both big and small.


Ingredients

1 cup(s) fruit juice, raspberry-flavor
1 3/4 cup(s) Prosecco, or other sparkling wine
1/2 cup(s) raspberries, fresh or frozen (12 raspberries)

Instructions
In a bowl, mix raspberry juice with Prosecco; divide among 4 champagne glasses. Drop 3 raspberries in each glass; serve immediately. Yields about 2/3 cup per serving.
